Thai Red Curry Tofu and Vegetables

Ingredients

  • 1 large onion, minced
  • 1 bell pepper, julienned
  • 1 can bamboo shoots, drained and julienned
  • 1/2 head of cauliflower, cut into florets
  • 1 1/2 package extra firm tofu cubed
  • 1/2 head of broccoli, cut into florets
  • 1-2 tablespoons of red curry paste
  • 2 cups water
  • Juice of 1 lime
  • 1 can of light coconut milk
  • Fresh Thai Basil
  • The Game Plan

    • 1. Combine the onion, bell pepper, bamboo shoots, cauliflower, tofu, curry paste, water and lime juice in the crock pot. Cook on low for 6 to 8 hours.
    • 2. 1 hour before serving add the coconut milk and broccoli.
