Enchilada Pasta


  • 1 lb. ground beef
  • 1/2 cup onion, chopped
  • 1 tbsp. taco seasoning mix
  • 1 can (4.5 oz.) chopped green chilies
  • 2 cans (10 oz.) red enchilada sauce
  • 1 can (14.5 oz.) chicken broth
  • 2 cups ziti noodles
  • 1/2 cup sour cream
  • 1 1/2 cups shredded mozzarella cheese

  • The Game Plan

    1. Cook ground beef until browned. Stir in onions, green chilies and taco seasoning and cook for 3 min. Stir in enchilada sauce and chicken broth and bring to a boil. Then stir in the noodles and bring the heat to low. Stir and then cover. Cook for 10-12 min., or until the noodles are cooked. Stir halfway through to prevent the noodles from sticking.

    2. Remove from heat and stir in sour cream and 1/2 cup cheese. Then sprinkle the remaining cup of cheese on top and cover with the lid until melted.

    3. Top with tomatoes and sour cream.
